    Lemon Cocktail with Soju: with just a few minutes and a few ingredients, making soju cocktails is easier than ever; this one is sweet and a bit sour with a mild aftertaste.

    Super Easy to Make: with just three common ingredients and as many minutes, it doesn’t get much more simple than this when it comes to cocktails with soju!

    Very Batchable: though I made this cocktail in a single glass, you could easily grab a few lemons and a couple bottles of soju to make a punch bowl's worth for larger gatherings.

    Ingredients

    Soju: this clear liquor is known generically as Korean vodka, and is available in numerous brands and formats around the world, but no more varied than where the drink originated – in South Korea.

    Simple Syrup or Allulose: if you tend to like your drinks sweet, you can add any liquid sweetener you'd prefer, though allulose is generally my preference for a low-cal option.

    Fresh Lemon Juice: central to a lemon soju cocktail, using the fresh-squeezed stuff adds that extra balance of flavor that brings everything up a notch!

    How to make a soju lemon drop: step-by-step instructions

    Step 1. Put your soju, liquid sweetener, and fresh lemon juice in your cup or shaker

    Step 2. Then thoroughly stir or shake the mixture for about 30 seconds, and pour it into your high ball glass over the ice. Enjoy!

    Recipe notes & tips

    Swap the Sweetner: as an alternative to allulose, you can use any flavored simple syrup you'd like; I recommend mint syrup, passion fruit syrup, or yuzu syrup.

    Using Flavored Soju: if you decide to use a flavored soju rather than plain soju, note that it will make your drink more sweet & flavorful, but it will also decrease the alcohol content by about a third. You’ll probably want to use no sweetener to make up for the extra sweetness. Pineapple, strawberry, or citrus would be my picks, of all the soju flavors.
