Soju Lemon Cocktail (Soju Lemondrop)

Sweet with a sour twist, this lemon soju cocktail is easy to make at any time of year, and it comes together in less than 3 minutes with just three ingredients over ice!

Ingredients

  • ¼ cup soju plain or flavored
  • 2 Tablespoons fresh lemon juice NOT from a bottle
  • 2 Tablespoons simple syrup or allulose
  • Cup or shaker
  • High ball glass full of ice cubes

Instructions

  • Put your soju, liquid sweetener, and fresh lemon juice in your cup or shaker.
  • Then thoroughly stir or shake the mixture for about 30 seconds, and pour it into your high ball glass over the ice. Enjoy!

Notes

Swap the Sweetner: as an alternative to allulose, you can use any flavored simple syrup you'd like; I recommend mint syrup, passion fruit syrup, or yuzu syrup.
Using Flavored Soju: if you decide to use a flavored soju rather than plain soju, note that it will make your drink more sweet & flavorful, but it will also decrease the alcohol content by about a third. You’ll probably want to use no sweetener to make up for the extra sweetness. Pineapple, strawberry, or citrus would be my picks, of all the soju flavors.
