Watermelon Soju Cocktail Recipe (Subak Soju)

Sweet with a bit of tang, this Watermelon Soju Cocktail, also known as a subak soju drink, is a fantastic addition to any summer soiree.

Ingredients

  • ½ cup watermelon chunks preferably seedless
  • ¼ cup soju plain or flavored
  • 1 tablespoon simple syrup or allulose for more sweetness
  • lemon-lime soda or ginger beer to top ~½ cup
  • ice or freeze the watermelon chunks

Instructions

  • Put the watermelon chunks and simple syrup into your glass and muddle them (you could also use a blender or pre-chop the chunks to make them easier to muddle).
  • Then add the soju & ice and lightly stir everything together with a spoon or chopstick, and top with soda & enjoy!

Notes

Messy Muddling: if you can't seem to get your watermelon muddled quickly enough, press it against the sides of the glass or pour it into a bowl and chop it into small pieces. Then return it to the glass and get to muddlin'.
No Soda, No Problem: even if you can't get your hands on the classic Sprite, never fear, because you can use any sweet fizzy drink as a swap for the lemon-lime soda.
Using Flavored Soju: if you decide to use a flavored soju rather than plain soju, note that it will make your drink more sweet & flavorful, but it will also decrease the alcohol content by about a third. You'll probably want to use no sweetener or a less-sweet soda, to make up for the extra sweetness.
